Lesson planning can be a very useful tool for teachers. Especially if you are new or are teaching a new language point. Making a plan will give you a framework to work from, but should not be used as a script to just be read from with no wiggle room to adapt to the flow of the class. The lesson plan will help you think about the goal of the class that day and keep you organized so you are prepared for what you need to get done for that class. Again we never know what will happen or what problems will arise so it should be readily available but not held and read from the whole class. After class it is a good idea to make notes on issues you had from the class and things that really went well. The written down plan should be saved so that you can refer to it in the future when you are teaching the same language subject to a new class, or maybe for another teacher who would like some assistance for their upcoming lesson. I think having a extra detailed lesson plan written out for ever class may be a little over kill, but being more prepared is always better than being less prepared. Especially for your job and when students are looking to you to acquire the skill of learning and speaking a new language.
